The Customer Tax Category on the Customer record. This value is brought into the Sales Order at the header and detail level and can be overridden on the Sales Order.
With Avalara, the Customer Tax Category should be mapped to Avalara’s entity use codes in the List lookup Cross Reference and is used while determining taxes.
